Opak Cassava is a cracker-like snack food that has a delicious, savory, and distinctive cassava taste. In the process of making cassava opaque there are activities of peeling the cassava skin and washing the peeled cassava, both of which involve workers with awkward postures that can cause work-related illnesses, namely musculoskeletal disorders. This research was conducted at UMKM Eka Jaya Opak Jl. Big Kutalimbaru No. 81 Salam Tani, Pancur Batu District, Deli Serdang Regency, North Sumatra. This study aims to determine the level of risk and action level of peeling and washing sweet potatoes using the REBA (Rapid Entire Body Assessment) method. The results of the calculation of work posture with the REBA method of operator posture in the sweet potato stripping activity is at a score of 8 which means at level 3 and for the sweet potato washing activity at a score of 9 which means it is also at level 3, this needs to be given corrective action to prevent occupational diseases. Recommendations for improvement in the peeling and washing of the cassava are to provide a work facility design in the form of work tables and chairs for the activity of peeling the cassava and washing the cassava which is driven by a motor in order to minimize occupational diseases, namely musculoskeletal disorders.
